I hope you've had a wonderful week and are now ready to kick back and have a fun weekend ahead. ;) For my 5 things today I'm sharing some more Autumn goodness and FINALLY the BBQ chicken pasta recipe and Annie's root beer float pie (yummy!) I hope you enjoy and have a blessed weekend. xo
ONE
First up the BBQ chicken pasta. Annie made this last week when it was one of her "help with dinner nights" and she had chosen to make this recipe out of her new recipe book. I was a little skeptical with all of the ingredients, but I'm telling you it was delish and a hit with the whole family!
This was the cookbook I had gotten for Annie off of instagram's buzzfeed tasty site. It's neat because I could personalize the cover and I could pick out the recipes that I wanted to be in the book. I did a variety of easy things Annie could do, for the most part, as well as what sounded tasty.
The book has great photos and step-by-step instructions, as well as even fun tips! Here's the full recipe:
BBQ CHICKEN PASTA
2 c. shredded rotisserie chicken
14.5 oz can diced tomatoes, drained
15.25 oz can of corn, drained
1/2 a red onion, diced
1&1/2 c. ranch dressing
fresh parsley, chopped - optional
2 c. shredded mozzarella cheese
16 oz cooked fusilli pasta
1 c. bbq sauce
salt and pepper to taste
Preheat oven to 350* . In a bowl mix together chicken, tomatoes, corn, ranch and bbq sauces. Add in pasta and stir well. Pour into a 9x13 baking dish and sprinkle with seasonings to taste. Top with the shredded mozzarella and bake for uncovered for 30 minutes. Sprinkle fresh parsley on top if desired.
It was really yummy ;)

This week's wonderful Fall weather has had Ruby and I out walking to enjoy the crunchy leaves and the turning colors around the bay. I also got in the Autumn spirit and baked up a vanilla chai spiced cake with glaze. Quite yummy.

The Fall weather also has me breaking out more of my Autumn wardrobe - including my camo pants and green sweatshirt I wore today. ;)
FOUR
Just like some folks do "throwback Thursday" - I've also heard of "fallback Friday" so I thought I'd share this old photo of our sweet kiddos I came across the other day. Look at those lips on Annie! They were such sweethearts, weren't they?? FYI: my son went to a college fair this week. We are getting so old. ::sigh::

This recipe was also from Annie's new cookbook and it was also really delicious. Here's the recipe:
ROOT BEER FLOAT PIE
1/4 c. milk
1 box instant vanilla pudding mix
1 small carton heavy whipping cream
1 graham cracker crust
12 oz root beer
If you don't pie a premade graham cracker crust you can make your own crushing up graham crackers with melted butter etc (lots of recipes online). Mix root beer, milk, and pudding until it's nice and thick. Beat heavy cream until peaks start to form. Gently fold the cream into the pudding mix. Pour the mix into the graham cracker crust. Freeze for 4 hours or place in fridge overnight. We enjoyed ours with a little whipped cream and sprinkles too.
We've also made the homemade pizzas recipe from this book and they turned out great too. And I think next up from it we're going to do breakfast for dinner one night soon and make berries and cream french toast bake from refrigerated biscuits. Stay tuned for that one!
