Taking a Break

Hey Friends! 

I just wanted to pop in and let you know that I'm taking a little blog break for the next week or 2. I will probably still try to pop in and visit you if I get chances! Just keeping busy and having fun with my family these last few weeks before school starts again.  Hope you're enjoying these last fleeting days of summer too!!  Looking forward to catching back up when I'm back and getting ready for my favorite season of Fall. Happy Homemaker Monday

Hello and Happy Monday to You!! 


Did you have a speedy weekend too? Where is the time going as we already head towards the middle of August!?? Annie and I were talking the other day about the summery things we still want to fit in - so we need to work to make those happen. We had some hockey this past weekend...but had a little time for fun too. One fun thing on our list was to go to a favorite food place that's only open in the summer and is near a fun mini golf course with lots of interactive holes. We were going to meet up with some friends of ours -but it didn't work out. And my Boy was off at his friend's cabin. So just Daddy, Annie and I did some bonding. Always fun in my book! 





THE WEATHER OUTSIDE IS:


Supposed to hit upper 70's to 80 degrees today. Even a bit warmer tomorrow. Then cool down a bit and some rain for Wed/Thursday.











ON THE BREAKFAST PLATE THIS MORNING:

RIGHT NOW I AM:


I'm enjoying some peace and quiet. My niece slept over with Annie last night and another friend came over this AM - so they had taken over the house. They just all left to go to another friend's house so it's quiet...temporarily. Lol










AS I LOOK OUTSIDE MY WINDOW:

Blue skies and sunshine out my office window. Perfect summer day ahead!








AS I LOOK AROUND THE HOUSE:


The girls have some sleepover things to pick up. I never did the dinner dishes from last night (SLACKER) - so need to load them and throw in more laundry.








ON TODAY'S (& this week's) TO DO LIST:

My Mom finally got an antibiotic and is feeling better! So this week we plan to do our belated Christmas in July fun. Yay!! And there's some hockey this week, errands to run etc.  I've been slacking more with my exercise (although pounds still coming off - and was officially 33 pounds down the other day) - so need to fit in more workout time this week. Plan to go visit my MIL.... A typical week I guess. 








CURRENTLY READING:


Not much new here currently. I've been terrible this summer about books - but good about magazines and newspaper (crosswords!) ;)  I hope to be better this Fall as I have SO many books lined up to read!! 

(this is still pretty much where I'm at with things - ::sigh::)








ON THE TV TODAY:


Game of Thrones, Food Network Star, Big Brother, Deadliest Catch, The Profit, some movies taped. I watched The Great British Baking Show finale - loved it!! 










ON THE MENU THIS WEEK:

MONDAY: grilling some burgers, corn on the cob, baked beans, veggie pasta salad, crab dip and crackers, fruit pizza cookie dessert


TUESDAY: build your own breakfast biscuits, fruit


WEDNESDAY: eat up any leftovers


THURSDAY: wild rice stuffed pork chops, roasted red potatoes, veggie side dish


FRIDAY: parmesan chicken, rotini pasta side dish, salad

TIP OF THE WEEK:

 I saw someone share on instagram the other day the idea to choose a special perfume just for your wedding time and honeymoon. And then to put it away and only wear it on your anniversary to take you back to that day. I thought that was a really romantic and special idea. My Hubby and I have been through a lot through all of our years together (22 married & 29 together) and talk about renewing our vows in the future. I think I'll have to pocket this idea away and steal it. ;)

Sloppy Joe Casserole

Hello my Friends! 


We're having a lovely rainy day here in the northwoods. It's making it nice and cozy, but not the best for a getting groceries kind of day. I had planned on doing that and then was going to make this casserole that I had pinned on pinterest. It sounds like something especially up my Hubby's alley. But I thought I would share the recipe off of pinterest with you today anyway. I have it pinned under my board favorite recipes which you can find here.  It looks great for a quick and easy dinner. So I won't have a report on what we thought of it yet, but I thought you still might want to check it out. Happy Thursday to you! xo

Ingredients
  • 1 lb ground beef or turkey
  • 3/4 c ketchup
  • 1/4 c yellow mustard
  • 2 tbsp brown sugar
  • 1 pkg cornbread mix - about 11 oz. box ingredients to make this - mine just needs water
  • 1/2 onion diced - optional
  • 1 small can of green chiles optional

  1. Brown the ground beef and onions in a pan on the stove.
  2. Once onions are softened and ground beef is cooked, turn heat off.
  3. Add your ketchup, brown sugar and mustard. Stir in with meat until well combined. Taste and add more sweetness, ketchup or tang of mustard according to your liking.
  4. Spray an 8x8 pan with non stick spray and pour your sloppy joe mixture in, evenly distribute across the pan.
  5. Use a bowl and make your cornbread mix using the ingredients necessary on the box or bag. (could add small can of green chiles into mix if you like - yummy)
  6. Pour your cornbread mixture on top of your sloppy joe meat into your dish.
  7. Put in the oven for the amount of time and temperature your cornbread mix requires, until top is golden brown.
  8. Serve and enjoy!
