Happy Homemaker Monday

Hello Friends & Happy Monday! ~

I'm getting to this late because I was helping my Mom meet with mover folks and get an estimate about her move in a few weeks. Also, helped her with a few things. By then I grabbed Annie from school & had to grab her things quickly and get her back up for hockey. How is life in your neck of the woods? Did you have a nice weekend? It was a nice one here. Played some games with the kiddos. My GF and I did a safe lunch and finally got to exchange Christmas gifts later last week. I also worked on some home projects this weekend. Caught up on some shows. Made dinner for my my Mom one night and we all played games (safely). Watched my Packers and unfortunately they lost. Such a bummer!! 😢 Oh well, there's always next year.

Sheet Pan Pancake

 Hello Friends,

Happy Thursday! It was a busy one here, but in the best way. I got together with a bestie of mine to finally exchange our Christmas gifts. We safely distanced as we hung out and had lunch and chatted and opened our presents. It was so nice to feel a bit more normal and hang out like that. Then my Mom came over for dinner (also safely) and we watched Annie play hockey online (streaming service because spectators not allowed in rink now). So even though I'm getting to it late, I still wanted to share this recipe for sheet pan pancakes that I found on pinterest.

This recipe is nice in that it's a way to make pancakes for a group and not have to be the one standing and doing all the making, flipping, and ultimately have to eat your food last. And it's often cold by then too! Lol So it was nice to pull the pan out of the oven nice and hot and eat all together at the same time. They were nice and fluffy and very tasty. I had pancake mix, so I made this pan with that. But you could use whatever favorite pancake recipe you usually use.

We had ours with bacon and breakfast potatoes. Yummy breakfast for dinner.

Heat oven to 425*.

Then make your own pancake batter. Or take:
4 c. of Bisquick pancake mix
4 large eggs
2 c. whole milk
Mix all together in a bowl and let sit for 5 minutes. Grease sheet pan well. Pour mix in pan. If you want add berries or other toppings (I did blueberries, raspberries & strawberries) and sprinkle all over the top. Bake at 425* for 15 minutes.

I brushed the top with melted butter when it came out of the oven.

Then cut a piece, cover with syrup and enjoy! 😋

Happy Homemaker Monday

Hello Friends & Happy Monday! ~

I hope you all had a bright and happy weekend. It was a great one here. More new furniture was delivered. The Packers won! And Scott came for a visit and spent part of the weekend here and that is always a lot of fun. We played a lot of cribbage and I have to admit defeat that overall he was the champ. Lol And we did some cooking and drank wine together and got into some deep conversations. He's become such a treasured special friend in my life and I'm grateful. Then he went off on his way back to AK for a few weeks for work, and my Mom came over for dinner the other night and we played cards. Always safely and with masks. Had fun with the kiddos too and just felt like a nice normal weekend. Back to real life after all the holidays. Now I've been diving into closet organization projects and some crafting. I'm choosing to believe this next year will be a really good one. 🙏 💕

THE WEATHER OUTSIDE IS:

ON THE BREAKFAST PLATE THIS MORNING

toast with natural peanut butter and jam, coffee with white chocolate raspberry creamer

HOW I AM FEELING THIS MORNING:

Enjoying the sunshine streaming in right now. It brings me energy. Feeling ready to accomplish tasks I want to get done today. I also have a dentist appointment

ON MY MIND:

The inauguration and worries for attacks around our country. I just keep praying for peace and unity for our world, but especially this country.

AS I LOOK AROUND THE HOUSE

It's clean and tidy and bright. I'm going to bake some banana bread later and just enjoy the cozy. I love the beautiful northwoods where I live and how much I love my home and the peace and joy it brings me.

CURRENTLY READING
I think I may start Midnight at the Blackbird Cafe  by Heather Webber next (haven't started it yet but will soon)

ON THE TV TODAY:

HGTV shows, kids baking shows,  The Good Doctor,  cooking shows, The Rookie, Escape to the Chateau on HGTV, This is Us, the Resident, The Chase, haven't started something new on netflix yet and still trying to decide what I want to dive into next

ON THE MENU THIS WEEK:

MONDAY -  sheet pan pancakes I didn't make last week with breakfast potatoes, bacon and fruit (I will share the recipe this week Mari! 😉 )

TUESDAY - Italian chicken and pepper sandwiches, potato wedges and tangy garlic sauce (HF meal)

WEDNESDAY -  cherry balsamic pork chops with green beans, roasted potatoes (HF meal)

THURSDAY - beef bulgogi meatballs with roasted carrots, ginger rice, sriracha crema (HF meal)

FRIDAY - order in (pizza?)

TO RELAX THIS WEEK I WILL:

hopefully start reading new book, craft, bake, play outside with Ruby

FROM THE CAMERA:

Some pics I took the other day when outside playing in the backyard with Ruby. In the one pic you can see all the trails on the bay. A lot of folks ski or take their dogs walking down there.

So bright and open but weird now with now Christmas tree. Lol

Some new kitchen inspiration - the one photo of a full kitchen shows the idea of what i'll be doing which is cherry cabinets with light granite. But the cabinets will be stained walnut to match other cabinets I have in other parts of my home (which is the wood panel pic) - I purchased that light fixture for above the island. And I'm planning to do some kind of light granite but with a lot of drama and movement in it.

A romantic lunch for 2 the other day ♥️

Besides wine this weekend, we also had some hot toddy's while playing cards 😉

New furniture -including a sofa with recliners in it and the Packers on tv. It doesn't get better 🎉

My new 50 oz tumbler keeps me on my water intake and it's helped me be so much better!

This is how Ruby watches the Packers. Lol 💤
