Hello Dear Friends!
How are things? Are you ready for a new week ahead? Can you believe it will be April in a matter of days?? The time just feels like it's flying. I wish the weather would match the time of year. It's nice and sunny lately...but so cold yet. And now snow in our forecast this week. Ugh! But I know Spring is working her way and it won't be long until it will be green grass and the bay will be free of ice and flowing again.
Thank you so much for the kind and supportive words about Matt and I on previous posts. It means so much to me. It's so wonderful to have found such a special man that feels like a kindred spirit. We have been dating about 5 months now and it just gets better and better. We have the best time together and we talk a lot about our future...so I would say it's going very well. 😊 ♥️ He's actually looking at different job opportunities so he could eventually live closer to my area.
He was up again this past weekend. We didn't do as much cooking and had fun going out to a few places to eat. We also went out to the movies. That was so fun! It is so nice to feel normal in that way. We saw The Lost City and it was a perfect fun popcorn movie. The theater has lounger seats so we basically sat in a lounger couch together and snuggled and enjoyed a very fun afternoon - popcorn included! 😉 He stayed over an extra night and left before 5AM this morning to make the drive back to his house and get ready for work! It was so nice to get extra time together and it gets harder to say goodbye each time.

ON MY TO DO LIST:
groceries and errands, time with my Mom, hospice facility and hospice calls from home, home organizing (Spring clean) projects, helping Annie switch bedrooms (she's moving into her brother's old room soon and I'm going to make her room an office/spare bedroom)
AS I LOOK AROUND THE HOUSE
Sunny and bright. Love the beams streaming in - and it gives me energy. But it's deceiving because I went outside with Ruby earlier and it's COLD! I need to do a few more house chores, but overall pretty tidy and all of my Easter and bunny decorations are out everywhere and make everything cheerful. Listening to Eva Cassidy radio and playing tug-of-war with Ruby on her rope toy.
waiting on some new books I ordered, reading Spring magazines too

ON THE MENU THIS WEEK:
* Not sure about menu as I need to figure out my grocery list yet. I'll probably try to use up some things in the fridge and freezer. I deleted pics I had of the recipes I was going to share with you last week. But here's the keto friendly soup I made for Matt and I a few weekends ago. I found it on pinterest :
- 2.5 lbs boneless, skinless chicken breasts or thighs
- 1 recipe Seeking Good Eats Green Enchilada Sauce or 1 (28 oz) can green enchilada sauce
- 24 oz chicken broth
- 1 cup half and half or heavy cream
- 2 cup Monterey jack cheese
- 4 oz cream cheese, cubed at room temperature (or softened)
- 4 oz green salsa (salsa verde)
- salt and pepper to taste
Slow Cooker Instructions:
- In a 6-quart slow cooker add chicken breast or thighs, green enchilada sauce, and chicken broth. Cook on Low 6 to 8 hours.
- Remove chicken and shred. Add shredded chicken, jack cheese, cream cheese, half and half, and green salsa to slow cooker. Turn slow cooker to warm and stir until cheeses are melted. Add hot sauce or additional salsa to taste.
- Serve and enjoy! Delicious topped with avocado, cilantro, green onion, and sour cream.
**Also....Since we had leftover Mexican kind of ingredients, the following morning Matt made an egg scramble with different veggies, breakfast meats, shredded cheese, garlic and green onion and even wilted in some spinach. We then loaded the scramble into low carb tortillas and wrapped them up like a crunch wrap and browned them in the skillet. We ate them with avocado, cilantro, & taco sauce. They were SO GOOD!!

I know that the Oscars last night were extra "exciting". Did you watch? But what I wanted to share is that Daniel Durant is a deaf actor originally from my area of the northwoods. His Mom is a teacher at Annie's school and she had her as a teacher in the past...and she even taught Annie some sign language. Daniel is in the movie CODA which won best picture last night! They did a premiere of the movie here last year and Annie went with a friend and got to meet Daniel and chat with him. An extra special memory now!
A neighbor friend has chickens and she's been sharing the wealth with me 😋
I forgot about this sweet little print I picked up, by a local artist, at a winter craft fair. I put it in this pretty frame and added it in with my Spring decor. It just makes me smile. 😊
We had sushi one night of Matt's visit...then out to the movies the next day...and after the movies had a late lunch that was so yummy! I had chilaquiles that were amazing!! I had to have Matt help me eat mine - it was so much food!
It's just so wonderful to have covid numbers low and see so many more people out enjoying lives normally again.
Matt's Mom texted me this adorable photo of him. She said it's one of her favorites. So cute, isn't he? 😍 What's kind of funny is that in this photo he's 5 years old and I would have been 11. Lol!
We planted some herbs this weekend that will hopefully sprout by the time it's warm enough here to plant flowers outside and I can transfer them to a pot out on the deck.
Prayers for gratitude and thankfulness for so many blessings. For Matt's Mom fast healing from her recent surgery. For Ukraine, Russia, and the surrounding countries taking refugees. For the Lord's light, love, and peace to spread in our world and cast out the dark and bring peace.
