Happy TGIF Friends! Yay for the weekend, right?
It has been crazy cold here today. With windchill this morning it was -30 below zero. Bbrrrr. I always crave soup when it's really cold. I think it's one of my favorite cozy winter meals for lunch or dinner. Are you a big soup person?
I thought today I'd share a yummy cheesy cauliflower soup I made recently. I found that recipe on pinterest and it said it was from realhousemoms.com It turned out great and was perfect comfort food for this time of year.
I put all of the initial called for ingredients in my slow cooker and let it cook on low for about 7 hours.
I then blended it all with my immersion blender until it was smooth. I added shredded cheese and heavy cream and let it all heat fully before serving. I forgot to get a pic of it in a bowl - but we topped ours with some bacon bits and chopped scallions. It was yummy! The tip I'll share is that whenever I add shredded cheese to a soup like this I always buy the brick of cheese and shred it myself. There's no preservative in it then and it melts better. It looks really good, but we are not cauliflower fans here. :(

Ha! I get that Mari. It's become one of our fave veggies. ;) And definitely helps with the cheese in lots of recipes.
