Happy Homemaker Monday

 




Hello and happy Monday my Friends ๐Ÿ‚๐Ÿ’›

It's been an early morning here. We got my girl on a plane back to school in Florida. It was so wonderful having her home this week - although not the unfortunate circumstances. It was wonderful getting time to catch up and hang out. It was really fun last night when she came with us to dinner with the C's and then we all came back to the house here and she played games with us until almost midnight! It's hard to watch her leave again, but so proud of how much she's loving and embracing her new life and doing so well. 

Matt and I have been loving walks in the beauty (so much Fall color now!) and we also got in our church time, some home projects, and of course Packers time! Yay another W for us. ๐Ÿ’š๐Ÿ’›

And FYI: we have some busy time ahead for a bit that I'll fill you in on later. So I'm taking a little break from blogging for a week or 2. 

But now on to the week ahead!

How much I love this season so much! It's been chilly out. Cozy in the house and so very pretty outside right now.

AS I LOOK AROUND THE HOUSE

Love seeing all the Autumn decorations around. I see such beautiful color out any picture window I look out at and I love how it fits the colors of our northwoods home so much too. Out front I've added more as Matt and I went and picked up a mum and some little pumpkins too. :)

For those affected by Hurricane Helene and their continued needs and healing. And for those affected negatively by Hurricane Milton too. For calmer weather ahead from now on!

Northern Lights and more Northwoods Autumn

 


Happy Friday to you Friends! 

I hope you have a wonderful weekend planned ahead. :) 

I thought I would share some shots I caught the past 24 hours. Last night the northern lights were spectacular from our back deck. So Annie, Matt & I went out to admire them and catch some pictures. It was so fun to watch them dance and the colors were so amazing this time! And I definitely saw Angels in them. Can you spot them? 


I think the first 2 are obvious to see. And then the 3rd one I pointed at what I see as her head/face, and then she has a flowing red dress and her green wings spread behind her. Can you see them too?



















And then I got to get out and enjoy more beautiful colors in our Fall leaves today. A gf picked me up for an early birthday treat. She took me out to brunch and then we came back and went on a long beautiful walk. It was wonderful and so nice to catch up! I'm so blessed to have such amazing family and friends (and I count you amongst them my Blogland Besties!)






I'm wishing you a weekend filled with clear blue skies, sunshine that feels just right, leaves crunching beneath your feet and a gorgeous palette of leaves and trees all around.

Chicken Crust Pizza

 


Hello Friends! 

I hope you're having a lovely sunshiny kind of day like we're getting here. The sunshine is illuminating the pretty trees all around and it makes my soul sing!๐Ÿ๐Ÿงก


Now I know this sounds like a weird thing - chicken crust pizza. When Matt told me he wanted to make it I told him I didn't think I'd like that. But I was wrong. Now please know it's not like regular crust pizza. I want to make you aware of that. But it does get crispy enough if you press it thin enough before baking, and it gives a nice chicken flavor, not weird. Plus it's packed with lots of protein and healthier than regular crust. So we've added it into our rotation more regularly. 




Our favorite way to eat it is like a chicken caesar pizza. But you could truly be versatile and do any chicken flavor profile you like. We make a caesar salad kit (can do lite for less calories) and once the crust is made we top it with the salad and dig in! But you could add sauce to the crust and more cheese. Or you could make it BBQ chicken, chicken taco, chicken bacon ranch - whatever you'd like! 





To make the crust: in a bowl place 2 cans of premium chunk chicken. Add in 2 eggs, 1 c. of parm cheese (the powder kind works best), 1 tsp garlic powder (or to taste), 2 tsp Italian seasoning (or to taste), some salt & pepper and mix well. Then place crust mixture between 2 pieces of parchment paper and press or roll to desired thickness. It crisps up best if you do it thinner - like 1/2 inch or so thickness. Then take top parchment off and place the crust still on the bottom parchment directly on the center oven rack. Bake in preheated 400* oven for about 25 to 30 minutes. Halfway through or so we like to take the crust out and flip it over onto big sheet pan add slide back onto parchment and into oven until cooked through and nice and crispy. But I don't think you'd even have to do that step if you want to leave it on one side and bake for longer. We just like to make sure both sides get good and crispy.






Then take it out and cut into slices. Top with salad and dig in! 



I think next time we're going to add some BBQ sauce in the final flip of baking and top with extra cooked rotisserie chicken, and some sauteed red onion and bell pepper and mozzarella cheese. 

And we also think it would be yummy do a taco one and add some seasoned refried beans spread on it - or some taco sauce - and then extra rotisserie chicken and mexican blend cheese topping and bake until melty and ready. Then top with shredded lettuce, chopped tomato, sour cream drizzle and a few crunched up tostada chips would be tasty too!
