Happy Homemaker Monday

Happy Monday Friends! 

I'm late with HHM today because this chest cold thing I have has been kicking my butt. I had to accomplish a few errands this afternoon and then worked on some house things, but got to it all later in the day and rested this AM.  So I'm finally sitting down now to work on this.  It will be the quick version. ;)   I hope to come finally catch up this week and visit you my dear Friends! Having no pep has really stunk

We had a decent weekend other than getting a lot more snow again! Gggrrr. I felt a little better on Saturday and Annie had a friend sleep over and they wanted to go to the trampoline park. So Hubby and took them there and we ran and got some dinner and grabbed some things at Menards we needed. A wild Saturday night date. Lol   Hubby and Son put a new toilet in the kiddos' bathroom and a new showerhead too. Always nice to get jobs done around here. But I just can't seem to kick this darn cough. It's getting old!













THE WEATHER OUTSIDE IS:

It got pretty decent out today - in the 40's and sunny. Looks like 30's and 40's the rest of the week.










ON THE BREAKFAST PLATE THIS MORNING:

Yogurt and a cup of coffee with coconut creamer

Listening to the news as I get ready for Hubby to get home from work

Beautiful twilight on the bay as the sun is starting to set

Pretty tidy and I'm getting ready to get leftovers out of the fridge to heat up for dinner














ON TODAY'S (& this week's) TO DO LIST:

Depending how I feel I will get groceries at some point. Dropped food off at my FIL's today and ran to the post office already. Hospice volunteering later in the week if I'm better. Projects I'm working on here. I think Annie may have some indoor soccer practices. She also has a play she is in at school that hubby and my mom and I will go watch and Annie is so excited about it ;)

I started reading a Nora Roberts novel - Whiskey Beach

 










ON THE TV TODAY:

Back to regular shows now the Olympics are done. Good Doctor, This is Us, Will and Grace, Greys Anatomy, Gold rush, The Profit















ON THE MENU THIS WEEK:

MONDAY: leftover ham and scalloped potatoes, veggies, toast


TUESDAY: grilled sandwiches and soup


WEDNESDAY: crepes in Annie's new crepe pan with lemon filling and fresh berries, sausage


THURSDAY: easy night - Annie's play



FRIDAY: not sure yet?


**I'm going to bake up some banana bread and I already made a peach pie this week

Checking in and Yummy Honey Lime Chicken Tacos

Hello Friends! 

Sorry I missed out on Happy Homemaker Monday yesterday, but I have been busy with kiddos home from school this week on February break. I'm also fighting a bit of a chest cold too. So I probably won't be posting much this week, but I wanted to share this yummy recipe I made the other night in my slow cooker. It turned out great and was full of flavor! 





I found the recipe from someone I follow on Instagram called Parsley and Pepper. I love her feed and lots of her recipes. It was such an easy recipe because I just threw everything in the slow cooker and about 5 hours later it was ready to shred up and eat. Here was the recipe as she posted it (I think she modified a different recipe she had found). 







What I basically did was add the chicken breasts into the slow cooker (I used 3 smaller ones), and seasoned them with the salt, pepper, cumin and garlic powder. I then put the salsa in a bowl and mixed in the lime juice and honey. I then poured that wet mixture over the chicken - and that was it! After about 5 to 5&1/2 hours I took out the chicken and shredded it with 2 forks and then placed the meat back in the slow cooker.  

This had such great flavor and nice sweetness from the honey. My crew likes things more mild, but I think it would be really great with some hotter spiced salsa - or even add a little jalapeno and have that sweet heat. We had it with soft shell and hard shell tacos, but it would be great for quesadillas and nachos too!! 







I would definitely recommend you give it a try. ;P

Happy Homemaker Monday




Hello Friends and happy new week to you! 

Sorry I missed HHM last Monday. It was one of those weeks and Monday was my hospice volunteer day that week too.  

I hope you all had a great weekend! We had a pretty relaxed weekend here. Some hockey - including going to watch our son's game on Saturday and we talked my FIL into coming with us. So it was nice to have him on an outing cheering at the game with us. ;)  Other then that we ran errands, did some cleaning around the house and the kids both had sleepovers. Hubby and I watched lots of the Olympics. Love that they're on, as it's always to fun to cheer for USA and watch the competitions. Now I'm ready to dive into the week ahead...














THE WEATHER OUTSIDE IS:

Single digits cold again today, but at least the sun is shining. Supposed to warm up into the 20's and 30's the next couple of days...but then back into the teens again later in the week. Some chance of snow on Thursday. Still winter deep freeze here folks












ON THE BREAKFAST PLATE THIS MORNING:

Toast with peanut butter, honey and a sprinkle of sunflower seeds for crunch, some berries and a cup of coffee












RIGHT NOW I AM:


Listening to Praise & Worship on pandora and working on my meal plan and grocery list as I never got to the grocery store over the weekend











AS I LOOK OUTSIDE MY WINDOW

Sunny and bright and the snow on my deck is sparkling











AS I LOOK AROUND THE HOUSE:

Ruby is eating her lunch and she likes to bring mouthfuls of food into the dining room next to where I'm working (her dish is in the laundry room). Does anyone else's dog do this? I guess it makes sense as it's no fun to eat alone, right? 















ON TODAY'S (& this week's) TO DO LIST:

The usual schedule with kiddos' hockey stuff. I need to get groceries. Visit MIL and bring dinner to FIL.  Projects around home I'd like to accomplish as I'm still in the new year organizational mode. I'm going to go through kitchen cabinets (especially pantry!) and re-organize. Ash Wednesday mass this week and Lent begins. Annie has playoffs next weekend already as her winter hockey will be wrapping up. However, she's already been going to indoor soccer practices for summer team and summer hockey practices will begin soon.  #mylifewithathletes

ON THE TV TODAY:

Amazing Race, Kids Baking Championship, Gold Rush - some movies taped again too. But most shows on hold because it's all about the Olympics over here right now!! Go USA!
















ON THE MENU THIS WEEK:

MONDAY: belgian waffles, oven crisp bacon and fruit


TUESDAY: honey lime chicken tacos


WEDNESDAY: spaghetti with marinara, garlic dinner rolls, salad (no meat - Ash Wednesday)


THURSDAY: slow cooker sweet & sour meatballs topped with cashews & served over rice (bring to FIL - as I didn't make this when I was going to the last week)



FRIDAY: quesadillas, veggies & dip, fruit 


**I'm going to make a strawberry pretzel cream cheese dessert this week and bake up some pumpkin chocolate chip bread (as i have some pumpkin to use up)




 










WHAT I AM CREATING AT THE MOMENT

Getting ready to send back my legacy box filled with slides! I've started back on my Grandpa's heritage album and started a project with vintage pins










NEW RECIPE I WANT TO TRY THIS WEEK:

slow cooker honey lime chicken tacos will be a new one this week & I'll make quesadillas with the leftovers Friday - but only cheese for me due to Lent

FROM THE CAMERA:
With this cold weather I've been enjoying more of these around here (our master bath stained glass windows is still one of my favorite things in our house) 




I received another diffuser as a Christmas gift and I've been loving it in our bedroom with soothing lavender essential oils. Plus, it has a neat cover that creates that design and you can change what color you'd like it to be ;) 




Annie was playing with my hair again this weekend (love when she does that) and was working on her fishtail skills
