The other day I made myself a small cheese quesadilla to go with my fried egg for breakfast. Ate it with a little salsa and it was so good!
When Matt and I go to a local breakfast place in our area, I often get the chilaquiles and it's so good! It's too big for me and Matt has to help me eat it. Lol It's got a bed of crispy tortilla strips that have been bathed in some kind of enchilada kind of sauce. And on top of that they put this amazing shredded pork mixture, pickled red onion and jalapenos, cotija cheese, and top it all with fried eggs and guac. It's pretty epic.
As I've gotten older I find I often love Mexican influenced breakfasts. Huevos rancheros is another good one. Do you like to try unique kinds of breakfasts and experiment with different flavors?
My kids both love a cheese quesadilla for a snack or lunch that I'll fry up for them along with a side of salsa and some fruit. During covid...when they were both doing online schooling....that lunch was often requested.
I have made other kinds of quesadillas - using the same method but different flavorings. I once made one that had some Thanksgiving leftovers in it and it was really good.
