For the Love of Quesadillas

 




The other day I made myself a small cheese quesadilla to go with my fried egg for breakfast. Ate it with a little salsa and it was so good! 

When Matt and I go to a local breakfast place in our area, I often get the chilaquiles and it's so good! It's too big for me and Matt has to help me eat it. Lol It's got a bed of crispy tortilla strips that have been bathed in some kind of enchilada kind of sauce. And on top of that they put this amazing shredded pork mixture, pickled red onion and jalapenos, cotija cheese, and top it all with fried eggs and guac. It's pretty epic. 

As I've gotten older I find I often love Mexican influenced breakfasts. Huevos rancheros is another good one. Do you like to try unique kinds of breakfasts and experiment with different flavors?


My kids both love a cheese quesadilla for a snack or lunch that I'll fry up for them along with a side of salsa and some fruit. During covid...when they were both doing online schooling....that lunch was often requested. 


I have made other kinds of quesadillas - using the same method but different flavorings. I once made one that had some Thanksgiving leftovers in it and it was really good.

Happy Homemaker Monday



Happy Monday Friends ☀️

How is it going in your world? 

Sure been rainy around here. There was some flooding in our area too. We've sure gone from one extreme to the other with weather these past few months. 

We had a lot of fun this past Friday. Matt got done with work early and we ran some errands after my hospice work time. Then we went and watched some college volleyball with the C's (they have season tickets) and then went out for dinner with them. We always have a blast when we hang out. :)  

Saturday I went to church (Matt went to help his folks - more on that in a sec) and then I went to visit my Mom and step Dad and bring them a few things. Then my daughter and her friend and I caught up on some big brother and hung out. 

Sunday I listened to my Pack on the radio (wasn't televised here that day) and holy moly... We were sucking it up and then came back in the 4th quarter to win!! It was pretty epic. All you need is Love baby. 💚

On an unfortunate note, Matt's dad had a fall last week and broke his elbow. He had to have surgery and pins put in. So Matt went up to the lake to see his folks and help with some things. I had things going on with Annie and helping my Mom, so I stayed here. Thankfully his Dad is okay now and recovering really well. 🙏

Annie had a dentist appointment and after we grabbed McD's before she headed back to school. So I had an egg mcmuffin and a sugar-free vanilla iced coffee 😋 















ON MY TO DO LIST THIS WEEK:

groceries and other errands, Annie dentist appt, my dentist appt, Annie has away games for volleyball, Annie starts captains practices for hockey, Matt trip for his new job, home projects, hospice work

AS I LOOK AROUND THE HOUSE

It's dark and gray and rainy out. I have a candle going and I'm listening to soft classical music. Bubba is sitting on the table right next to me and the computer and purring happily. I can hear the dryer thumping. Just peaceful home life and I LOVE it. 💕

Some Fall Pinterest Recipe Inspiration (with some fun photos thrown in) 🎃

 



Hey Folks! 

I hope this Thursday is treating you well. It's an unusually warm one here in the northwoods. I think it's supposed to storm a bit this weekend. I've been enjoying the sunshine today though. :) 


These warmer days haven't stopped me from looking up some Autumn ideas (& fun images) on pinterest. As many of you know, Autumn is my favorite time of year. A time to enjoy crisp weather, but not cold enough to want to hibernate. Just cool enough to go for long walks to see beautiful colorful trees everywhere, wear cozy soft sweatshirts and sweaters, hear geese fly overhead, smell the woodsmoke from my neighbor's stove, and want to sip nice hot spiced drinks - like chai tea and apple cider. 

So I thought I'd inspire a Fall menu with a little help from pinterest. I love going down the rabbit hole of images, recipes, decorating ideas etc I spend more time there than I should! Lol 


I'm so glad you're here to share a seasonal meal with me. Come on inside! 🎃 






Maybe we should decorate the kitchen island or table with a lovely centerpiece first:

Our first course will be a salad course. I think this salad looks and sounds amazing..

I think all the different shades of brown and cream are so pretty in the Fall. It seems there is so much inspiration for decorating our homes by what we see and find in nature. 🍂 



Sorry got sidetracked... next up, maybe a fall medley of veggies would be nice along with our pasta and pork chops?



Finally, what meal would be complete without some dessert options. I have a couple of selections. For the apple cider lovers, maybe a slice of this bread?
  


I wonder if it will taste as good as the donuts you can find at apple orchards or pumpkin patches?




Or if you're more of a pumpkin person, perhaps these cookies would satisfy your sweet tooth a bit better..






And of course I'll have nice warm apple cider to sip...but if you want to try something more unique (& decadent) maybe you'd want to try this rich dark chocolate drink with your treat? 






It's been a wonderful evening my Friend. It always goes too fast. Sigh
