Good morning, happy Monday Friends,

Yay for reaching February! January is always such a long month in the northwoods. Once we reach February it's nice knowing it's a shorter month. And then once we reach March we know Spring could be right around the corner. 💐💚
However, February came in snowing away. We probably got about 1/2 a foot of snow between Saturday and Sunday. So I'm sure the groundhog didn't see his shadow around here! Sigh And this morning on the news they said we get another 3 inches of snow or more midweek. 🙈
Our weekend was nice and flew by. We went out for dinner Friday night. Then snuggled in a lot of Saturday and Sunday and hunkered in from the snow. We played cards and watched some fun movies. Matt had never seen any of the Lord of the Rings movies. During the Christmas holiday we had watched the first one. Then over the course of the past couple of days we watched the other 2 movies. It was a nice cuddly weekend watching the snow fly and watching movies snuggled together downstairs on the big screen. ☺️ We also both did several mile workouts. Matt & I have been working on our health plan together and now looking at more menu planning together too. It's always so much easier to stay focused on health when your partner is all in too. ❤️
THE WEATHER OUTSIDE IS:

Coffee with protein and almond milk creamer, low sugar cinnamon oatmeal with apples & walnuts
(I have still been making sure I fast at least 12-14 hours each night and then I have been letting myself eat healthy breakfasts)
ON MY TO DO LIST THIS WEEK:
errands, son & Jill coming to visit & stay a few days, groceries, house projects, bible study, hospice work
THINKING ABOUT:
the Super Bowl coming up...our friends are going to come watch with us - working on the menu ideas 😋
AS I LOOK AROUND THE HOUSE
I'm listening to Celtic harp music and thinking how pretty the snow looks outside. I do love that about all the snow - it quiets everything and makes it so peaceful. But it also makes it SO beautiful. Bubba, as usual, is trying to get my attention. He does every time I want to sit down and work on my laptop.

*Need to get groceries and not sure what I'll make this week? My son coming for a visit so thinking I may do low carb BBQ chicken wraps with broccoli slaw, or chicken rice soup. Also, I'll use up the eggs and make an egg bake with lots of veggies to have for mornings etc. But would I be Mom if I didn't bake up something he loves? Lol So I think I may bake a loaf of his fave banana bread too.
** Matt & I have been menu planning together a bit too. Putting more focus on protein and complex carbs. And drinking TONS of water. For lunches this week I think I'm going to cook up the Costco asian chicken crumbles & sauce I have left to make us romaine lettuce cups with shredded veggies too.

Last night we tagged teamed dinner & Matt made his yummy chicken protein crust - this time with Mexican seasoning (think cumin, chili powder, garlic powder) And then we topped it with refried beans seasoned with taco seasoning & spices, taco sauce, Mexican blend shredded cheese and baked some more. Then topped with a chipotle salad kit I had tossed up, some chopped tomato & onion, and some Quest protein taco chips crunched on top. The first pic was my piece. The 2nd is Matt's plate (he put sour cream on his too) It was SO tasty and we'll make it again!! If you want the protein chicken crust recipe I talk about it here.
