Hello there and Happy Thursday!
I had mentioned earlier in the week that I made pork chops in the air fryer and that they turned out AMAZING! I absolutely recommend trying them this way. I had also shared that when I made the pork chop dinner for Matt & I, that had put together a really yummy asparagus dish too. And so here are the recipes for them both. I'm also going to share a bonus recipe...and it's another air fryer one, because I recently made baked potatoes in the air fryer. And they also turned out great! I guess the air fryer is becoming my new favorite toy. 😉

I didn't take a picture of the pork chops I made, but this is the photo from the pinterest recipe I used. I was really surprised that raw pork chops could turn out so well in only 10 minutes! I used a meat thermometer to be sure and I suggest you to do the same. I followed this recipe exactly, other than doing 10 minutes instead of 9 and they were so good!


And this asparagus I made was definitely not WW friendly, but a keto person's dream. Lol I did have some, though, and it was heavenly. Another keeper for sure! This is not an air fryer recipe to be clear. I baked this dish in the oven in my glass 9x13 dish as you can see.

Taking the time to make the homemade cheese sauce portion is absolutely worth it. The only place I cheated was using store bought bacon crumbles on the top instead of frying up my own bacon. Here's the recipe:



If you make the above meal I recommend doing what Matt did with the leftovers the next day, and fry up leftover pork chops, asparagus, some other veggies and eggs & cheese in a skillet. It made it a wonderful brunch! 😋

And I recently made some baked potatoes in the air fryer. I poked holes in the potatoes. Rubbed olive oil all over the skin and then also rubbed in some sea salt, pepper, garlic & onion powder. Air fried them at 400* for about 40 - 45 minutes. The middles were perfect and the outside tasted like potato skins you order in a restaurant. Crispy like that. Also SO GOOD and I recommend you give it a try.
