Hello Dear Friends ☀️
Happy Monday to you! Sorry I've been a bit MIA lately. I have a feeling that's how blogging may go for me this summer. A bit of hit and miss. So please forgive me for that. I still want to try to stay connected with you friends as much as possible. I will come around and visit this week and whenever I pop into blogland. I've been keeping busy with helping my Mom, summertime with the kiddos, catching up a little more with friends and family now that we're allowing a little more covid let up to things, continuing to date Scott and just being outdoors so much more. I haven't wanted to be on the computer as much in general. Scott and his daughter came up to camp in the area recently and all of our kiddos met and it went so great! We had a lot of fun. We went on an outing to some fun places with Annie and his daughter. Played family games at my house, and one night Scott and I cooked a meal here and we all sat down at the dining room table together. I couldn't have hoped for it to be better and I'm so very grateful. ♥️
I hope you had a wonderful July 4th weekend for my U.S. friends. It was a quieter one here. I spent the early part of the weekend with Scott before he had to fly back to AK for his 2 weeks of work. The kiddos spent part of the weekend with their Dad and spent the 4th at their friend's cabin. I was invited to my girlfriend's in-law's cabin. But I felt good to just stay home and my Mom came over and hung out. We ate yummy snacks, played cards and sat outside and had a fire on the new deck. S'mores included of course! 😉Be forewarned I'll be sharing lots of pics from the weeks past down in the photo section of this post! 📷 😊
This past weekend Annie played in a hockey tourney. I kind of hate it because I don't like the idea of bigger gatherings like that, no matter how cautious everyone is being. Her Dad coached and of course I'm vetoed in the matter. Lol They took 2nd place. But to be extra safe I'm quarantining from my Mom for a while. On to the week ahead....
THE WEATHER OUTSIDE IS:
ON THE BREAKFAST PLATE THIS MORNING
yogurt, coffee
HOW I AM FEELING THIS MORNING:
Feeling pretty good as I hadn't had the best sleep lately, but last night I slept well. So i feel refreshed and ready to tackle this new week.
ON MY MIND:
Dentist appointment this week. Jobs I want to tackle around here. The deck is finally done and the stairs down to the dock too - yay! In a few weeks the work crew are coming back to put in Annie's new bedroom bay window. Ad is going to come and work with Aaron to build a platform for the pool so we can still put that up for the season.
AS I LOOK AROUND THE HOUSE
Tidy and sunny and bright. Did lots of cleaning catch up over the weekend
CHORE I'M NOT LOOKING FORWARD TO THIS WEEK:
Endless laundry and washing Annie's hockey stuff - Ugh! 😷
CURRENTLY READING
summer magazines
ON THE TV TODAY:
Grantchester, Americas Got Talent, cooking and HGTV shows, still bingeing Gilmore Girls and starting season 7, some movies taped also
ON THE MENU THIS WEEK:
MONDAY - leftover grilled veggies from the weekend will get sauteed with potatoes in a skillet and add eggs and cheese and make a scramble
TUESDAY - crepes, nutella & berries, breakfast potatoes, fruit
WEDNESDAY - gnocchi with pesto and pine nuts, mixed veggies, garlic bread
THURSDAY - tortilla pizzas with veggies on top, fruit
FRIDAY - maybe door dash something delivered? Maybe from local yummy sushi place?
I recently made this for lunch for Annie and I and it was so yummy. Bruschetta toasts...
I had tomatoes to use up. And I'm growing basil. So I chopped tomatoes and added garlic, basil, seasonings and olive oil. Mixed it up and let it sit
I brushed some toast with melted garlic butter and topped with pieces of mozzarella. Then broiled it in the oven until it was golden brown.
Then topped the toasts with the fresh veggies and herbs. So garlicky and sweet and yummy!
I also recently made these for breakfast one morning:
I took crescent rolls and filled them with some nutella and several semi sweet chocolate chunks. Then I brushed them with cream and sprinkled with cinnamon/sugar mix and baked until golden.
😋 😋 😋
TO RELAX THIS WEEK I WILL:
read in the sunshine, craft, work on hospice cards
FROM THE CAMERA:
It's so nice to have the deck all done! ✅
Scott and I took his daughter to the park one afternoon and I had forgotten to bring my phone. There was the most beautiful patch of peonies and I was bummed I couldn't take pics. Scott sneakily took a bunch with his and sent them to me the next day ♥️
Summertime fun. Lots of fires out on the deck - with s'mores included of course! Ever make one with a peanut butter cup? Yum! And we took the girls to the trampoline park. Pic above is Scott watching his daughter 💜
Had a bobcat here hunting bunnies last year and have another one (or same one?) back this year.
Both flowers and summer food are equally colorful artwork :)
PRAYER LIST:
For our world and all of it's continued turmoil and pain. For a covid vaccine. And all of those fighting on the front lines of this pandemic. For those sick, suffering, isolated and alone. For peace and healing and unity. For the safety and health of my family and friends, especially those doing sporting events right now. For Scott continuing his work in law enforcement and as a first responder 🙏
