Happy Monday Friends ☀️
I hope you are enjoying a wonderful start to your week whatever you're up to 😊 It's been a busy one already this AM getting some things done around here and running Annie around for some things. I'm not looking for my girlie to grow up too fast... but it will be such a blessed thing when she gets her drivers license. Lol
Did you have a nice weekend? It was a pretty mellow one here, which was kind of nice after the past couple really busy ones. Went to lunch with a girlfriend and caught up. My Mom and I had some fun time one night sharing dinner and playing cards. I was able to get some projects done around here and caught up on some shows and some reading.
Also, I'm recently back to my hospice work and it's felt so good to give of myself in those ways again. I had one very special moment in my work last week when I was sitting with a resident at the hospice house and massaging her hands with lotion and praying and singing with her. She expressed how it helped so much with her pain. I can never say enough how I receive so much more doing hospice work than what I give.

Running Annie for time with friends and her hockey this week, grocery run, bank run, lunch with my Mom and my Aunt, hospice work, looking into a potential class I may want to enroll in this Fall, exercise classes (been back to intermittent fasting and working on more weight loss)
AS I LOOK AROUND THE HOUSE
It's clean and bright and the sun is streaming in. Hot and muggy one outside today. It's supposed to rain later and we sure could use more of that! I did a some extra clean up this past weekend anticipating my Aunt and my Mom coming to hang out and do lunch this week. Hopefully it will be lovely out and we can "dine on the deck". Lol This is an Aunt that couldn't get to our family reunion a few weeks ago, so I'm going to share pics with her too. 💜

Since it's mainly Annie and I, there is so much less formal cooking going on to really share a weekly menu right now. So instead I will try to share a recipe here each week:
I love Gooseberry Patch cookbooks for meal inspiration. And I was looking through this one the other day
And I saw this recipe and think I'll need to give it a try for an Annie and I meal night. She'll eat some chicken, but other than that she doesn't really like or eat meat. So we do a lot of veggie dishes around here these days. I think I would grill the veggies first instead of boiling/steaming. And maybe even wrap up the quesadillas and cook on my grill. I try not to use the oven much in the summer time. 😉
