An Apple A Day...

Hey Friends! 

I thought I'd finally share that recipe for the yummy apple delights I was telling you about. Also, a few other apple tidbits too. You know what they say about an apple a day, right? ;)  They happen to be one of my favorite fruits - and I love anything apple dessert or just a snack too. Lately I've been addicted to apple slices I dip in cookie butter for a quick satisfying snack. Holy yum!  Do you have a favorite apple recipe??

But here is the recipe for Pioneer Woman's Peanut Butter Apple Delights. I made them for my family recently and they all LOVED them.



Preheat the oven to 350 degrees F.
Halve the muffins and spread a heaping tablespoon of peanut butter on each half. Layer the apple slices on the peanut butter. Mix the sugar, cinnamon and nutmeg together in a small bowl and sprinkle about 2 teaspoons on top of each muffin half.
Put the muffin halves on a baking sheet and bake for 10 minutes. Set the oven to low broil and cook until bubbly and caramelized, about 3 minutes. 

Another yummy apple dish is one I've had under my recipe tabs for a while. I made it again as a side dish to one of our meals,  recently, and my crew gobbled it up so fast there were barely any leftovers. It's for Cararmel Apple Salad and you can find the recipe here.  Crunchy, salty, sweet perfection made from apples, butterscotch pudding, cool whip, pineapple tidbits, mini marshmallows, and honey roasted peanuts.

And the final thing I wanted to share is my new mini pie pan. It's been fun and just perfect for making things for our family of four. Recently I made us each our own individual apple pies for dessert. My Kiddos especially thought it was so cool to get their own pie. (I only ate a 1/2 of a pie for the record) ;) 

We had them warm with a scoop of real vanilla bean ice cream. A little bit of heaven and perfect for a chilly Fall night. I'm thinking I'm going to make us individual chicken pot pies next.

  1. I saw the show when she made those. I do like peanut butter and apple together so I bet I would like these. Your little pies are so cute and I know they are yummy too!

  2. These look so good and they're adorable too. Apples are one of my favorites too. I made some chunky applesauce today using apples, golden raisins, peach bellini simple syrup and orange juice - yummy!

  3. I love apples too, and these recipes sound deliciously sweet! PB and apples sounds like an interesting combo. This has made me think of my own favourite apple recipes, one of which my mom would make every fall, but I have never ventured to make myself (apple dumplings).
