Dill Pickle Pasta Salad & Keeping Cozy

 



Hello my Friends and Happy Friday to you! 


I hope you're staying cozy and maybe even have some fun festive plans for the weekend? We have some busy things to do, but hopefully get some fun time with friends. Also, after church we will be going to hang out with my Mom and step Dad and help them with some things, share a meal and play cards. 


Life has felt busy. Trying to finish lots of final things (some holiday baking, decorating touches, finishing cards and wrapping gifts, running errands etc) as my Annie comes home soon (yay!) and then my in-law's come into town to stay for the holiday time too. We also host all the Christmases here and I want to be able to be present...so thus, busy Gal now am I. Lol 


It has been really cold here. And we've gotten a fair amount of snow already and they're calling for more this week again. So we are having lots of cozy moments and snuggling in...which is always nice. 





The other night we went out for dinner and ran some errands and drove by our local beautiful Christmas display that gets put up along Lake Superior every year. It's so pretty. We hope to take Matt's folks to it this year! 



I plan to share my turkey soup recipe in the near future - but I only have time for a quick post today, as I leave to go volunteer at the hospice house soon. So I thought I'd share this recipe for dill pickle pasta salad that was so good. I made it a few nights ago to go along with some boneless BBQ ribs and a green salad. Kind of summer BBQ in the winter. 😋 It's a recipe I got from one of my faves as you know - Pioneer Woman. If you love pickles you will LOVE this. It's very creamy, dilly and yummy. I added an extra ingredient and threw in some cubed salami I needed to get rid of from Thanksgiving time. It was truly delish and if you try it I hope you enjoy! xo

  1. Good morning Carrie. Oh goodness, my granddaughters will love this pasta dish. They both love pickles and they love pasta,. The two are great together. The Christmas scene is so pretty...Our towns Christmas parade is Saturday night...sure hoping it doesn't rain. This is certainly a busy time of the year. I've been wrapping gifts all morning. I sure wish you could send some of that snow here. I've always wanted to experience a White Christmas but it just doesn't happen around here. Big hugs to you

  2. Isn't cozy a great word? Especially this time of year - I'm all about it.
    I saw the PW episode where she made that salad recently. I love pasta salad, but don't like dill pickles... :)

  4. We just had boneless pork ribs tonight :) No pasta salad for us, but still enjoyed it. Yes busy time of year, I would like to go see the lights we have around here but not sure if we will get to it this year or not. We have had a couple warm days that melted the snow but are going into a frigid air mass coming down, so we will be very cold this weekend. Nice to get things done ahead of time so your not working the whole time you have special time with family.
